My Sandwich List

I don’t eat sandwiches a lot – but I do have a few favorites. Yesterday, Dave created a new sandwich recipe which is hands down THE BEST sandwich I have ever eaten. Unbelievable amazingly yummy!  I don’t know what was all in it other then that it was Steak lol. He has the recipe on his blog though.

My all time favorite sandwiches ever:

1. Dave’s Breaded Steak Sandwich – this is the AMAZING steak sandwich Dave made for dinner last night. I’m eating one right now, as I type lol. He came home for lunch and made one up for me:) Have I mentioned that I LOVE this guy?

2. Malboro Man’s Favorite Sandwich on Pioneer Woman – I’ve made this a few times – its one of the things that I can make that everyone, including Dave, really enjoys. It’s a short list – so that’s pretty awesome.

3. Farmer Sausage Sandwich on the lunch menu at the Brass Lantern – This is what I order every time. I’m not a big fan of farmer sausage but the sauce they use on this sandwich works so well with the farmer sausage that I absolutely love it.

Recipe Exchange Toffee

My Cousin Nancy’s Toffee
sent to me by Jill:) Sounds amazing, can’t wait to try it.

2 cups butter (no substitutes)
2 cups sugar
2 tablespoons light corn syrup
11 oz package milk chocolate chips
1 cup finely chopped nuts (pecans are good)

Line a 15×10x1 pan with foil extending over the edges. In a 3 quart sauce pan, melt butter. Stir in sugar syrup and 1/3 cup water. Cook over MEDIUM heat until sugar is dissolved.  Clip candy thermometer to side of pan and cook over medium heat, stirring frequently, until the thermometer registers exactly 290 degrees (this takes 15-30 minutes).

Remove thermometer and pour into lined pan, spreading evenly. Cool just 5 minutes, then sprinkle with chocolate chips.  Let stand 2 minutes until chocolate melts and spread the chocolate over the toffee surface. Top with nuts and cool several hours to set. Lift the candy out of the pan by the foil and break into pieces. Store in airtight container.

Steak Sandwiches

There are three types of cooks in the world. There are cooks who can take random ingredients and make amazing meals on a whim. Then there are cooks who can make great meals when they follow a recipe. And of course, there are those cooks who can’t make an edible meal even with a recipe, lol. Dave is one of the first, and I am in the middle. I don’t like to cook – I have a select group of recipes that I have made many times and can do well, so I tend to fall back on those. It comfortable, safe and very boring. So, Dave ends up doing most of the cooking around here.

He likes cooking, but not every day so yesterday I decided to surprise him by making supper – and making something new. I choose Marlboro Man’s Favorite Sandwich from The Pioneer Woman Cooks blog because it looked like something Dave would enjoy and it looked fairly simple. I added fresh sliced mushrooms to the onions when I cooked it, and Dave suggested a slice of Havarti would be awesome on top next time. The sandwich was amazing, and even the kids enjoyed it. It uses minute steak which is very easy for the kids to chew so that was a plus.

And the best part? I LOVED making it cause it was something I hadn’t tried before. I even enjoyed cleaning the kitchen and washing lunch dishes before hand so I could have a clean kitchen to cook in, lol. I am going to make a point to make supper more often, and to try new recipes – and I am excited about it, lol.

Poppy Sead Bread

Gail sent me this for the recipe exchange:)

3        Tbs poppy seeds

3         Cups flour

11/2     Tsp salt

11/2     Tsp baking powder

3          Eggs

11/8     Cup oil

21/4     Cups sugar

11/2     Cups milk

11/2     Almond extract, butter extract & vanilla extract

Bake 350 – 35 minutes for small pans, 40 minutes large

Remove from oven – puncture top with meat fork

Drizzle mixture over warm bread in the pans

Drizzle Mixture

1/4     Cup OJ

1/2     Tsp almond, butter & vanilla extract

3/4     Cups sugar

Makes about 6 small loaf pans or 2 large loaf pans.  Great for gifts at the holidays!

Awesome Cherry Pineapple Cake!!

This is super easy and tastes amazing – Louise brought the ingredients and cooked it while we had cell last night!

You need:

- 1 white cake mix

- 1/4 cup of butter

- cherry pie filling

- can of crushed pineapples

First, pour the pie filing into a 9×13 cake pan. Spread over the bottom. Spread the pineapple overtop of the cherries. Sprinkle the cake mix powder over the pineapples. Carefully spread butter over the top. Cook at 350 for about an hour, until brown and crispy on top.

Serve warm with ice cream – AMAZING!!!!
